Easiest and tastiest roasted chicken and potatoes

Are you a person who is always very busy and has no time to spend cooking every evening? Or maybe you don’t like to cook much or just don’t know how?

This is the perfect recipe for everyone, for all levels of cooks, but the best thing about it, is that the preparations take only about 10min, afterwards you put it in the oven and just take it out after it is ready. Easy ๐Ÿ™‚

Ingredients for 2 people

  • 1 small chicken (about 500g) a.k.a. poussin
  • 1 whole garlic head
  • 5 medium sized potatoes (you can add one sweet potato too)
  • Some fresh or dried aromatic herbs
  • Extra virgin olive oil
  • 1 tbsp butter (optional)
  • 1 tbsp honey
  • Salt


Preheat the oven to 210 degrees celsius.

Open the chicken cavity and salt it inside and a bit from the outside as well.

A small tip - you can use two pans for the chicken and for the potatoes separately like I did. But you can also put the potatoes in one pan and put the chicken on top!

Cut the garlic head in half and put one half inside the chicken. Grease a pan with some olive oil and put the chicken in.

Peel and cut the potatoes in big wedges and put them in a greased baking pan with olive oil, sprinkle some salt and some aromatic herbs, if you like, and stir so the olive oil is coating everything well. Put the other garlic head half on the potatoes.

In a small pot or pan put the honey, olive oil, herbs like rosemary and butter and let it all melt and mix for 5min on medium heat. Once the sauce is ready, pour it over the chicken. And put the pan with the chicken in the oven with the potatoes.

Cook for 10min at 210 degrees, after that turn your oven to 180 degrees and keep cooking for 30min more until the chicken is tender (you can check this by inserting a knife in the thigh and see how soft it is) and the potatoes are done!

Voilรก! Easy, incredibly tasty, and you can do the same with a bigger chicken too, you will just adjust the time to cook it a bit longer.
