Seriously. Even people who don’t like legumes or vegetables in general MUST like chickpeas! They are so full or flavour and so versatile to be used in stews, sauces, dips, felafel, there are just so many ways to us them!
Here is a fantastically easy recipe for you!
THIS FANTASTIC GREEK CHICKPEA STEW COOKED IN THE OVEN
- 500g DRY CHICKPEAS soaked in water for a minimum of 8h (why dried? Because I just think they taste better and have a nicer texture to them, and I have a better control over the salt)
- 2 CARROTS sliced
- 1 ONION cut in rings
- 1 CELERY STALK finely chopped
- 1 LEMON juiced
- 200ml EXTRA VIRGIN OLIVE OIL (always!! other oils are either refined or with more polyunsaturated fats that oxidise faster, there is too much scientific research by now on EVOO)
- 400ml WATER
- SALT to season
There aren’t many really!
Heat up your oven at 190 degrees Celsius. Get your dutch oven or any cooking dish with a lid.
Put all of your ingredients in the pot or your dutch oven. And put it in your oven for the next 3 hours.
Don’t worry, it will not burn as you will leave the lid on and everything will keep sautéing inside the pot in a humid environment, so it will not dry up!
AND VOILÁ… That’s really it! Enjoy it on its own or as a side. This is a great dish to remember that vegan can be tasty and healthy and there is no need to eat meat in every meal.
